Sensory evaluation is a scientific discipline. It uses the senses – sight, smell, touch, taste and hearing – to evaluate an item. In launching an innovative food product, sensory evaluation is done to ensure consumer feedback for the product will be positive. Incorporating the results of sensory evaluation feedback may eliminate wasted effort during formulation development and can resolve quality issues early in the process. The sensory evaluation will consider the appearance, aroma, flavor, and texture of a proposed food product.
